Flatbread mini-pizza and spicy hot cocoa


Here are some photos of a mini flatbread pizza I made one day:







To make it I took equal parts whole wheat and white flour, combined it with enough water to make a dough,kneaded in roasted flax seeds and let it rest for about 20mins. I then rolled the dough into balls, flattened it and browned them slightly in a skillet. While I was doing that I had heirloom tomatoes,bell peppers and marinated artichokes roasting in the oven. When I was done roasting the veggies and cookie the flatbread I just spread some hummus on the flatbread, the put the veggies on top and sprinkled it with capers. It was sooo good :)

Here's a photo of the low-sugar spiced hot cocoa I make alot,


For two big mug-fulls I use,

  • 2 cups of soy or rice milk
  • 2 rounded tablespoon cocoa powder
  • 1 teaspoon stevia(if you are using sugar do about a tablespoon I think? just adjust it to your taste)
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon chili powder
  • tiny pinch of salt
  • 1/4 teaspoon vanilla extract

I take the soy milk and combine it with the cocoa, spices and salt in a small sauce pan, bring it up to a simmer while continuously whisking. Then I just take it off the heat, add vanilla extra and stevia then serve. It's really simple but really nice on a super cold day.
